Quick and Easy Lunch Ideas for Work

Trying to think of quick and easy lunches may be one of the most difficult parts of the morning routine before heading to the office. Taking a shower, brushing your teeth, it’s all pretty mindless–but easy lunch ideas for work? That requires a bit more thought, which can truly be a challenge if you’re not a morning person. To make your life a little bit simpler, we’ve come up with a few workday-friendly options that will help you get out of your peanut butter and jelly rut.

Chicken with Brown Rice

This is an easy one you can whip up the night before while you’re making dinner. Simply grill a chicken breast until it’s cooked through on each side, and then slice it into lengthwise into strips. Place the chicken back on the grill, along with your favorite veggies–zucchini and eggplant are good options–while you cook the brown rice. If rice isn’t your thing, you can also use couscous or quinoa as a substitute. Mix it all together with a little salt, pepper and lemon juice, and you’ll have a tasty and healthy lunch all ready for work the next day!

Veggie Burritos

This is a fantastic option for vegetarians–or anyone who is simply a fan of fresh vegetables. You’ll need a can of black beans, whole-kernel corn and chili-style stewed tomatoes (drain all three), as well a cup of shredded cheddar cheese and a pack of burrito-size flour tortillas. Preheat your oven to 400 degrees Fahrenheit, and combine the beans, corn, tomatoes and cheese in the meantime. Spoon the mixture onto the tortillas, fold and place them in a 3-quart shallow baking dish. Pop your veggie burritos in the oven for eight minutes and they’re ready to go! The next morning, take one or two of these healthy entrees with you to work. Just heat them up in the microwave for 1-2 minutes, and they’ll be ready to eat.

Fruit and Vegetable Couscous Salad

If you love couscous, you won’t be able to get enough of this easy lunch idea for work. Cook the couscous one night while you’re making dinner, and store it in a Tupperware container. Make sure your refrigerator is stocked with your favorite fruits and veggies–everything from strawberries to red peppers or spinach will do the trick. To speed up your morning routine, you can pre-chop the fruits and vegetables as well. Before leaving for work, toss everything in a bowl and throw in a bit of honey, basil and olive oil. Voila! A tasty lunchtime treat.
